A Cornish girl's food adventures



So here’s a funny thing, in the UK I don’t like avocados.

In the USA I can’t get enough of them. I don’t know why, I can’t explain it.

I don’t know if they’re a different type of avocado, if it’s just that they don’t have to travel as far or if my palate has changed, all I know is that I actively seek them out now rather than studiously picking chunks of them out my salads (sorry Mum.)

This is my current preferred method of consumption. Obviously you can play around with the ratios depending on how big your avocado is and personal taste.

Makes enough for just me really but up to 4 if I’m forced to share


1 ripe (but not too squishy) avocado
1 scant tbsp finely chopped mild onion
handful of cherry tomatoes
1 scant tbsp chopped fresh coriander
finely chopped red chili to taste
big squeeze of lime juice
freshly ground black pepper
1 crushed clove of garlic (optional)

De-seed the tomatoes and finely chop the flesh. Remove the stones from the avocado and either peel them or scoop out the flesh. Roughly mash this (I like a chunky guacamole) before mixing in all of the other ingredients along with a generous squeeze of lime. Serve with whatever takes your fancy.
