PARMESAN AND HERB DIP
I love sunny evening cocktails and yummy dips but I would prefer them to be a little bit more waistline friendly. This is a step towards the answer. I know it’s not totally guilt free, it’s got parmesan in it, but not loads so as long as you share it you can indulge without worrying about your arteries too much.
2 tbsp finely grated parmesan
big handful of fresh Italian herbs (I used oregano, basil and parsley)
1 tsp olive oil
4 heaped tbsp fat free Greek yoghurt
Finely chop the herbs and put them in a small food processor along with the cheese and olive oil. Whiz it all up for few seconds. Add the yoghurt and lots and lots of pepper and then pulse again to blend it all together. Spoon into a bowl, drizzle with a tiny splash of olive oil and a sprinkle of black pepper and serve with what ever you fancy, I like it with crunchy pita chips and carrot sticks.
